Crispy German Potato Pancakes

Pickled Beets

 

Ingredients:

 

8 medium fresh beets

 

1 cup vinegar

 

1/4 cup sugar substitute (like Swerve or monk fruit)

 

1 1/2 tsp whole cloves

 

1 1/2 tsp whole allspice

 

1/2 tsp salt

 

Instructions:

 

Scrub beets, trim tops to 1 inch, and boil in water until tender (25-30 mins). Cool, peel, and slice.

 

In a saucepan, boil vinegar, sugar substitute, cloves, allspice, and salt for 5 minutes.

 

Pour mixture over sliced beets and refrigerate for at least 1 hour. Drain before serving.
