🧂 Ingredients
- 1 (4–6 lb / 2–3 kg) prime rib roast (bone-in or boneless)
- 2 tbsp olive oil or softened butter
- 1 tbsp kosher salt
- 2 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 4 garlic cloves, minced
- (Optional) 1 tsp onion powder
- (Optional) ½ tsp smoked paprika
👨🍳 Instructions
- Prep the Roast
Take the prime rib out of the fridge 1–2 hours before cooking to bring it to room temperature. Pat dry with paper towels for a perfect crust.
- Season Well
Mix olive oil (or butter) with salt, pepper, garlic, rosemary, thyme, and optional seasonings. Massage the mixture all over the roast until fully coated.
- Heat the Oven
Preheat your oven to 450°F (230°C).
- Create the Crust
Place the roast fat-side up on a rack inside a roasting pan. Roast at 450°F (230°C) for 15–20 minutes, until beautifully browned.
- Roast Slowly
Reduce oven temperature to 325°F (160°C) and continue cooking until desired doneness:
- 🔴 Rare: 120–125°F (49–52°C)
- 🟣 Medium-Rare: 130–135°F (54–57°C)
- 🟠 Medium: 140–145°F (60–63°C)
⏰ Typically 1½–2½ hours, depending on roast size.

Transfer the roast to a cutting board, tent loosely with foil, and let rest for 20–30 minutes to retain juices.
